White Bean Chicken Chili

Ingredients

For the Chili
  • 1 yellow onion, diced

  • 1 jalapeño, seeded and minced (or a can of pickled jalapeños )

  • 3 cloves garlic, minced

  • 1 tsp. dried oregano

  • 1 tsp. ground cumin

  • 2 (127 ml) cans green chilies

  • 1 rotisserie chicken shredded

  • 5 c. low-sodium chicken broth

  • salt & black pepper

  • 2 (540 ml) cans of white beans, drained and rinsed

  • 1 (540 ml) can of frozen corn, drained and rinsed

For the Garnish
  • 1/2 c. sour cream

  • 1/4 c. crushed tortilla chips

  • Freshly chopped cilantro

Instructions

  • In a large pot, over medium heat, heat oil. Add onion and jalapeño and cook until soft, about 5 minutes.

  • Add garlic, oregano, and cumin, and cook until fragrant, 1 minute.

  • Add green chilis, chicken, and broth, and season with salt and pepper.

  • Bring to a boil, then reduce heat and simmer, covered for about 10 minutes.

  • Ladle chili into bowls and garnish with sour cream, cilantro, and chips before serving.
