Hearty and healthy chicken white bean chili.

1 yellow onion, diced
1 jalapeño, seeded and minced (or a can of pickled jalapeños )
3 cloves garlic, minced
1 tsp. dried oregano
1 tsp. ground cumin
2 (127 ml) cans green chilies
1 rotisserie chicken shredded
5 c. low-sodium chicken broth
salt & black pepper
2 (540 ml) cans of white beans, drained and rinsed
1 (540 ml) can of frozen corn, drained and rinsed
1/2 c. sour cream
1/4 c. crushed tortilla chips
Freshly chopped cilantro
In a large pot, over medium heat, heat oil. Add onion and jalapeño and cook until soft, about 5 minutes.
Add garlic, oregano, and cumin, and cook until fragrant, 1 minute.
Add green chilis, chicken, and broth, and season with salt and pepper.
Bring to a boil, then reduce heat and simmer, covered for about 10 minutes.
Ladle chili into bowls and garnish with sour cream, cilantro, and chips before serving.
