Roasted Carrots & Broccoli

Ingredients

  • 6 carrots

  • 1 large broccoli crown

  • Olive Oil

  • Salt & Pepper

  • Parmesan

  • Seasonings of Choice (Italian, Garlic)

Instructions

  • Preheat the oven to 400 degrees.

  • Cover a baking sheet with tin foil.

  • Peel carrots and cut diagonally into slices. Cut the broccoli into florets.

  • Place the carrots and broccoli onto the backing sheet. Drizzle generously with olive oil. Add salt and pepper and mix the vegetables to coat evenly.

  • Bake for 20 minutes, until crispy on the outside and cooked through.

  • Remove from the oven and sprinkle with parmesan cheese and any seasonings of your choice.
