Simple baked mac and cheese. Works with milk or cream. For best results use a sharp aged cheddar.

Baked Mac And Cheese

Ingredients

  • 6 tbsp butter

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 6 tbsp flour

  • 3 cups of milk

  • 2 cups of cream

  • 3-4 cups of elbow macaroni

  • 3 cups of cheddar cheese, grated

  • 1 cup of mozzarella cheese, grated

  • 1 cup of breadcrumbs

  • salt, pepper, nutmeg, mustard to taste

Instructions

  • Preheat oven to 400

  • Set a large pot of salted water on high heat

  • Melt butter in a sauce pan over medium heat

  • Add onions and garlic, cook until translucent Stir in flour to make a roux

  • Slowly add milk and cream Stir in salt, pepper, nutmeg, and mustard

  • Cook until mixture thickens, 6-8 minutes, stirring occasionally

  • While sauce is thickening add pasta to boiling water Cook until al dente Drain pasta and return to pot

  • Combine pasta with cheese in a large casserole dish Pour sauce over the noodles and stir in

  • Top with breadcrumbs and more cheese Bake for 15 minutes
